用來(lái)鑒別與多肽功能、穩(wěn)定性和構(gòu)象密切相關(guān)的特定的氨基酸位點(diǎn)。丙氨酸（Ala）是最小的手性氨基酸，通過(guò)將Ala系統(tǒng)性地、依次地替換序列中每一個(gè)氨基酸，來(lái)分辨出某一特定氨基酸對(duì)整個(gè)蛋白生物活性的影響。
